Raw Snack Bites with Dates, Nuts and Nibs

Quick, Easy & Delicious Raw Snack Bites 

It is well-known amongst my closest family and friends that I like to keep my freezer well-stocked with food, and snacks are no exception. Because, let's face it, there is nothing worse than an empty cupboard (or freezer, if we're keeping with the theme) when you feel an impending hunger attack coming on. Which is precisely why I like to keep my freezer stocked with these delicious little snack bites which are not only delicious, but they are also full of energy for whenever you need it most. Best of all, there is no baking required and they take less than 20 minutes to make from start to finish. Enjoy!

Ingredients for raw snack bites (Makes about 20-25):

  • 15 pitted dried dates

  • 1/2 cup walnuts

  • 1/2 cup pecans

  • 1 tsp good quality cinnamon

  • 3 Tbsp good quality coconut butter

  • 1/2 tsp sea salt

  • 1 tsp good quality coconut oil  

  • 3 Tbsp raw cacao sweet nibs (my favorite is by Big Tree Farms)

  • Raw licorice powder (I love the Danish brand, Lakrids) or dried, unsweetened coconut flakes for rolling

Directions: 

  1. In a food processor, add the pitted dates, walnuts, pecans, cinnamon, coconut butter, sea salt, and coconut oil. Blend just until it forms a paste (small pieces are ok, but the mixture should stick together). Transfer the mixture to a bowl.
  2. Mix in the raw cacao sweet nibs with a spoon until combined.
  3. Spoon about a Tablespoon of the mixture into your hand and roll into a small ball (the size depends on you, but I like to make about 1 inch x 1 inch. Repeat until all of the mixture has been used.
  4. Roll the snack balls in raw licorice powder, coconut flakes or your favorite topping. 

Note: 

  • I like to store my snack bites in a plastic bag in the freezer so that they are always fresh and always ready when I feel a snack attack coming on (plus Singapore's humid climate doesn't keep anything fresh  at room temperature for very long ;).
